Instead of cream and sugar, its truffles are rich with cacao butter and coconut oil, and sweetened with blue agave nectar. On the savory side, we love Cru’s cauliflower-root vegetable samosa with pink pepper cream and mango-mint chutney, and the fab pear napoleon with exotic mushrooms and truffle oil. The chefs, a husband-wife duo, use only sustainably grown, fair-trade ingredients for their tasting menu dinners, and never cook over 118 degrees, significantly reducing gas and electrical consumption while also preserving food nutrients. And holy cacao: They’ll even clean up using eco-friendly, vegan cleaning products.
